Cowboys and Cadillacs isn’t just a restaurant or bar. It is a gathering place shaped by family, artistry, and an ever-enduring, iconically independent, tenacious Texas spirit.

The Corzine family has never shied away from big dreams or bold challenges. What began as a vision built from imagination has grown into a legacy - built by determination - rooted in creativity, craftsmanship, and connection.

Throughout the family’s 20+ years in New Braunfels, they’ve restored historic buildings, cultivated successful businesses, and brought together art, culture and hospitality in ways that honor the character of Texas.

Cowboys and Cadillacs represents the culmination of that journey. Every detail — from the architecture to the dining experience to the music on the rooftop — reflects the Corzines’ belief that places should bring people together.

JOHN MARK DICKSON

Executive Chef

Born and raised in the South, Chef John Mark’s love for cooking was ignited in the warmth of his grandmother’s kitchen, where every meal was a story. It was there he developed a deep appreciation for the art of food—one that would shape his life’s journey.

Determined to refine his craft, he attended Johnson & Wales University in Charleston, South Carolina, studying hospitality management with a focus on the culinary arts. Seeking mastery, he traveled across the country, working alongside Michelin-starred chefs, absorbing techniques, and honing his skills in kitchens that demanded precision, passion, and innovation.  

Now rooted in San Antonio, Chef John Mark embraces the rich culinary heritage of Texas, bringing his refined expertise and lifelong love for traditional Southern flavors to the world of Texas cuisine. 


MATTHEW MOYNIHAN

General Manager

Matthew Moynihan serves as General Manager of Cowboys and Cadillacs, where he oversees daily operations, guest experience, and the continued evolution of the venue as a Proper Texas Social House. With a strong background in hospitality leadership and degree in psychology, Matthew brings a people-first approach to service, team development, and operational excellence.

Known for his attention to detail and steady leadership style, he focuses on creating an environment where exceptional hospitality and memorable experiences happen naturally. From the dining room to the rooftop, Matthew works closely with the culinary, bar, and events teams to ensure every element of the Cowboys and Cadillacs experience reflects the brand’s commitment to artistry, quality, and authentic Texas hospitality.


PAUL SCOTT

Manager - Back of House

Paul Scott discovered his passion for hospitality early in his career, quickly finding his niche in delivering exceptional customer service. With more than 13 years in the food and beverage industry, Paul built his experience from the ground up, developing a deep understanding of people and the importance of connecting with them.

Throughout his career, Paul has trained and worked within several renowned hospitality brands, including the JW Marriott, The Delta, and the Renaissance, along with other high-end, fine dining establishments. These experiences shaped his approach to guest service, where attention to detail, professionalism, and genuine hospitality define every interaction.
